A snack bar that repurposes ugly or discounted produce into healthy affordable snacks while educating consumers on the issues of food waste.

Use Case

The consumer would come to our mobile setup at universities, local festivals or farmers markets. We will include eye-catching aspects like live demos and taste tests as part of our campaign to create awareness surrounding food waste and how consumers can help solve these issues as individuals. This aspect will have the intention of bringing awareness within the public about food waste and what their next steps can be to play a role in the solution. This will be our introduction as a brand, what we stand for and where our products are sourced. Consumers then have the opportunity to browse the products for sale and make a purchase. Our prices are aimed to be affordable due to the decreased expense of our produce, making healthy snacks accessible to more people, especially those on a budget.

Potential

So much of the food we grow and transport is wasted by us as consumers due to this illusion that our produce needs to appear a certain way to be consumed. Our vision is to change the way the public views ugly, bruised, and imperfect produce, removing this negative stigma altogether. We believe greater change can be created though leading by example with our delicious snacks and not only reducing overall waste as a business but teaching others how they can make a difference in their own lives. This is why we aspire to educate consumers, altering their perception and behaviour surrounding stigmatized produce thus creating greater long term, sustainable change. This will ideally have an effect on consumer demand of defected produce creating positive change throughout the entire food system.

Business Case

The Bruise Bar is a for-profit startup. We are a snack bar that sources produce from farms and grocery store sales rack. We will create weekly menus based on what we collect, repurposing the produce into healthy beverages and snacks like dehydrated fruits or veggie chips available for sale to the public. Our main goal is to have an educational campaign throughout our business which surrounds food waste leaving our customers aware. In the short term we plan to start out as a booth at universities, local farmers markets or festivals, working to establish our brand, perfect our products and analyze the initial interest. For the long term we aspire to obtain a food truck in order to reach new demographics and potentially creating an e-commerce business to sell our products online or in-stores.

Objectives:

  1. Repurposing ugly and stigmatized produce that would otherwise have been wasted on farms and at grocery stores
  2. Provide tasty, healthy and affordable snacks that can be enjoyed by consumers
  3. Ultimately changing the perceptions and behaviour of consumers and removing the stigma of ugly or imperfect produce.

Our Team

Our Mission

We The Bruise Bar are a team of students who came together to try and find a solution to food waste and insecurity. Our mission is to change the perspective surrounding ugly produce through repurposing these foods into healthy snacks like smoothies, dried fruit and veggie chips and selling them at local events, eventually expanding into a food truck. We also want to educate consumers through linking a campaign to our business. Our campaign advises consumers on the issues of food waste and how they as consumer have the ability to make change by buying produce from that discount rack before going for the aesthetically pleasing produce on the market. Our campaign will involve taste testing and outreach through interactive social media content to gain interest from consumers. Ideally, we want to create greater social change through the alteration of consumer behaviour.

Our Background

Our team came together through the Ideas Congress program at the University of Guelph. We all come from different years and programs making our team very interdisciplinary and perfect for targeting such an interdisciplinary issue. We chose to participant in TFF as this contest outlines our vision as a start up and would be an amazing opportunity to help kick start our business. Our team has a burning passion for solving the food waste issue initially in local communities and hopefully creating a global impact. Our goal is to not only provide healthy, delicious snacks sourced from produce that would otherwise be discarded, but also educate consumers on why food waste is a growing issue and how they have the power to make a difference after leaving our booth.
