It is unacceptable that more than 23 million school going children in Africa attend class hungry and rural smallholder farmers especially women are no longer able to predict rainfall patterns resulting in low productivity of traditional crops such as maize millet, sorghum and beans. Edible Bugs is a scalable cricket farming innovation that produces fortified protein biscuits that can feed these hungry children and provide an profitable farming practice for rural farmers. Results show that crickets have high protein content of over 60g/100g dry weight basis over soybean by 49 per cent and beef by 36 per cent which can be utilized to solve the Protein-Energy-Malnutrition (PEM) in rural children.
