With basic ingredients groundnut which grow easily in all countries, it will easily applicable for the whole world. The raw material “Groundnut meal” can replace the animal based protein. Our Background

Global annual mortality rate caused of Protein Energy Malnutrition (PEM) reaches 7.1 per 100,000 people and that is the highest mortality rate globally compare with other nutritional deficiencies. Groundnut is an important crop grown in the worldwide, Groundnut meal is one of the high protein which is found as by-product of groundnut oil. It contains protein up to 60% with 11 amino acids make it eligible and have a big potential to transformed into new source of high protein food. The productivity of groundnut meal in 2007 reaches 37 million tons and increase 46 million ton in 2014. In 2050 it is approximated that the production can be up to 90 million tons which can cause a waste problem without good care handling. Fermentation is the best way improve protein digestibility, organoleptic characteristics and elevate nutritional value of food material. As well as developing a desirable texture, flavor, and aroma of the product. Enzymatic hydrolysis also may decrease or eliminate anti nutritional constituents; Fermentation can reduce the aflatoxin up to 88,95. Tempeh is also better for our planet. If you replace meat protein with vegetable protein, such as tempeh, you need about 5 to 10 times less land to produce it. Greenhouse gas emissions for animal-based foods is 250 times that of legumes In process of making flour, groundnut meal tempeh is dried and milled. This flour is gluten free which applicable for high protein product or for substitution non-gluten allergen flour.
