Lyofresh Technologies develops efficient and affordable freeze dryers to preserve food, reduce & avoid food waste & add value to food.

Use Case

Small farms (less than 2 hectares) operate about 12% of the world’s agricultural land. Family farms operate about 75% of the world’s agricultural land. The UN FAO estimates approximately 20% spoilage losses at the farm level occur due to: a lack of preservation; transportation; cold chain infrastructure; and market dysfunction. For example, a 2 hectare tomato farm in Malawi has a net yield of approximately 1.962 tons with a value of $627 USD at the farm gate. It will also waste 0.386 ton, with a value of $123 USD. If this spoilage was avoided by freeze drying it would yield 21kg of freeze dried tomatoes, with an added value of approximately $800 USD by capturing the processing value at the farm. The farmer now has a new revenue stream, can keep some in reserve or trade it and avoids waste.

Potential

If implemented at different scales throughout the food system in both developed and developing countries, we can significantly change the dynamics of food waste and food security globally. The ability to avoid spoilage and preserve even a fraction of food at or near the farm without refrigeration and while maintaining nutrition for 20 or more years will significantly improve farmer’s lives: by avoiding economic losses; reducing the use of inputs that are wasted by spoilage; creating new markets and revenue streams for farmers from value added processing; and allowing farmers to keep a portion of their harvest for later use or to trade. We even foresee farmers making different choices in what they grow if the pressure of getting products to market is reduced. That’s one example of several.

Business Case

We are using a proven social venture business model called parallel innovation. To begin, we design, and commercialize an industrial sized unit of our patent pending technology which can freeze dry in 1/3 of the time and ½ of the energy compared to conventional freeze dryers. Manufacturing is outsourced to a third party partner. This matches an existing market need in a global $4.5 billion USD market. Once successful, we invest in R&D to adapt the scale and design for use in developing countries and new users: retailers, the home and more. We are still exploring technology delivery models to maximize impact in developing countries, and may partner with farmers directly, establish microfinance partnerships, or centralize processing in small facilities with local businesses.

Objectives:

  1. Scale from current proof of technology prototype. Design and fabricate small industrial scale minimum viable product.
  2. Refine and validate minimum viable product with pre-identified first customers and begin generating revenue from sale of first units
  3. Use profits from revenues to design model for developing countries; build, test in developing countries in pilot projects. Measure impact

Healthy Food for Everyone, Anywhere.

"Healthy food for everyone, anywhere" is as lofty a mission statement as they come. It speaks to the type of idealism that drives any start up, and especially Lyofresh co-founder, Nicholas Steele. It represents the proverbial north star that we at Lyofresh are constantly looking to and asking of our process. It is also, truthfully, what drew in every member of this team.
It is integral to us to produce a product that substantially decreases food waste and allows for more people to have access to good foods. In a world where we want our food fast and have little regard for nutrition, we are attempting to change the game and reintroduce healthy options that are not always accessible. For us, healthy food is a priority.
Though our design statement is asking a lot, we at Lyofresh are prepared to give everything we have to accomplish our goal. We are an inspired team who closely identifies with the Thought for Food mission and are looking forward to doing our part to feed 9 billion people by 2050!

Our mission is intentionally as close as we could make it to the UN SDG #2, as we believe that profitability and social impact are not mutually exclusive, and that the triple bottom line of people, planet and profit is the future of business.

Our Background

We are a passionate team of students spanning multiple disciplines: Engineering, MBA, Business, Communications, Disaster and Emergency Management, and more who share this common mission. We've developed a patent pending freeze drying technology to tackle hunger and food security. By implementing this preservation technology in different points of the food system from the farm to the table, we believe that we can significantly reduce hunger and food insecurity globally.
